Radishes

Beets

Beets handle cold well and grow best in cooler weather. They'll sprout in soil between 50°F to 78°F. In warmer areas, choose adaptable types like Detroit Dark Red, Merlin, or Early Wonder to avoid heat issues.

Potatoes

Potatoes mature in 75 to 95 days. Choose quicker-growing types like Yukon Gold or Norland over longer-maturing ones like russets. They are suitable for USDA Zones 2 to 7.

Peas
